  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 tablespoon red curry paste
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cucumber, thinly sliced
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, crushed
  • 1 avocado, sliced (optional)
  • 1/4 cup green onions, chopped (optional)
  • 1 tablespoon sesame seeds (optional)
  • 1/2 cup edamame (optional)
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce (for sauce)
  • 1 tablespoon lime juice (for sauce)
  • Hot water as needed (for sauce)

Instructions

  1. In a bowl, combine soy sauce, fish sauce, lime juice, brown sugar, and red curry paste.
  2. Add the sliced chicken and marinate for at least 30 minutes.
  3. Rinse the jasmine rice under cold water.
  4. Combine rice with coconut milk and 1 cup water in a pot.
  5. Bring to a boil, reduce heat, and simmer for about 15 minutes until tender.
  6. Heat a large skillet over medium-high heat.
  7. Cook the marinated chicken for 6–8 minutes until golden and cooked through.
  8. Remove chicken and sauté the sliced bell pepper for about 3 minutes.
  9. Mix peanut butter, soy sauce, lime juice, and hot water until smooth to create the sauce.
  10. Assemble bowls with jasmine rice as the base.
  11. Arrange chicken, bell pepper, cucumber, carrots, and bean sprouts on top.
  12. Drizzle with peanut sauce.
  13. Garnish with cilantro, crushed peanuts, and optional toppings before serving.

Notes

For deeper flavor, marinate the chicken overnight. Use fresh lime juice and high-quality coconut milk. Avoid overcooking the chicken to keep it tender and juicy.
