  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh corn kernels (or 2 ears of corn)
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1/2 cup Greek yogurt
  • 1/4 cup crumbled cotija cheese
  • 1 sliced avocado
  • 1 cup halved cherry tomatoes
  • 1 cup cooked quinoa
  • Optional: black beans, jalapeños, or radishes

Instructions

  1. In a bowl, mix olive oil, garlic powder, chili powder, salt, and black pepper. Coat the chicken breasts with the mixture and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked. Let rest before slicing.
  3. If using fresh corn, grill the corn for about 10 minutes until slightly charred, turning occasionally. Once cool, cut kernels off the cob.
  4. In a large bowl, mix grilled corn, red onion, cilantro, lime juice, and Greek yogurt to create the street corn salad.
  5. In serving bowls, layer quinoa, sliced grilled chicken, street corn salad, cherry tomatoes, avocado, and cotija cheese.
  6. Add any optional ingredients like black beans or jalapeños for extra flavor.

Notes

Marinate the chicken overnight for deeper flavor. Add cayenne pepper for heat or lime zest for extra brightness. Store components separately for meal prep.
