Irresistibly Delicious Sticky Chicken Rice Bowls

  • 1 pound boneless, skinless chicken thighs
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame oil
  • 2 cups mixed vegetables (such as bell peppers and broccoli)
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 1 tablespoon chopped cilantro
  • Optional: 1 teaspoon sriracha

Instructions

  1. Dice the chicken thighs into bite-sized pieces.
  2. In a bowl, whisk soy sauce, honey, rice vinegar, grated ginger, and sesame oil to make the sauce.
  3. Chop mixed vegetables into even-sized pieces.
  4. Cook jasmine rice according to package directions and set aside.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Add diced chicken and cook until browned, about 5–7 minutes.
  7. Reduce heat to medium and add minced garlic. Sauté for 1 minute.
  8. Pour in the sauce and stir to coat the chicken. Simmer for 5 minutes until thick and glossy.
  9. Add the vegetables and cook for another 3–4 minutes until tender-crisp.
  10. Serve over rice and garnish with sesame seeds and green onions.

Notes

Use fresh ginger and garlic for best flavor. Avoid overcrowding the pan to ensure a good sear on the chicken. Don’t overcook the vegetables to keep their texture and nutrients intact.
