Spice Up Your Dinner with Mediterranean Chicken Thighs

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh rosemary and thyme sprigs
  • Optional: 1/2 cup pitted olives
  • Optional: 1/4 cup sun-dried tomatoes
  • Optional: 1/2 cup chopped bell peppers

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, cumin, red pepper flakes, garlic, lemon zest and juice.
  3. Pat chicken dry with paper towels.
  4. Season chicken with salt and pepper.
  5. Rub the spice mixture evenly on each chicken thigh.
  6. Let marinate for at least 30 minutes, up to 2 hours in the fridge.
  7. Place chicken skin side up in a baking dish. Add rosemary and thyme sprigs.
  8. If using, add olives, sun-dried tomatoes, or bell peppers around chicken.
  9. Bake for 35-40 minutes or until internal temperature reaches 165°F (75°C).
  10. Rest a few minutes before serving to retain juices.

Notes

For extra crispy skin, dry chicken thoroughly before marinating. Avoid overcrowding the pan to ensure roasting, not steaming.
