  • 1 cup granulated sugar, divided
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup sliced almonds
  • Optional: 2 tablespoons bourbon
  • Optional: 1/4 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine peaches, 1/2 cup granulated sugar, and brown sugar. Bring to a gentle boil. Remove from heat.
  3. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. In a small bowl, mix milk and vanilla extract, then combine with dry ingredients until just mixed.
  5. Place butter in a 9×13-inch baking dish and melt in the oven.
  6. Pour batter over melted butter without stirring.
  7. Spoon peach mixture evenly over batter. Do not stir.
  8. Sprinkle remaining 1/2 cup sugar on top. Add sliced almonds if using.
  9. Bake for 45–50 minutes, until top is golden and filling is bubbly.
  10. Let cool for 15 minutes before serving.

Notes

Use a mix of white and yellow peaches for more depth of flavor. For a thicker filling, stir in a tablespoon of cornstarch with the peaches before cooking.
