  • 2 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 cup kale, roughly chopped
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: 1 avocado, sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons pumpkin seeds
  • Fresh herbs like cilantro or parsley for garnish
  • 1 teaspoon chili flakes for a spicy kick

Instructions

  1. Rinse quinoa to remove bitterness. Peel and dice sweet potatoes. Chop kale.
  2. In a slow cooker, combine quinoa and vegetable broth.
  3. Add chickpeas, sweet potatoes, cherry tomatoes, red bell pepper, and kale.
  4. Drizzle with olive oil and sprinkle turmeric, cumin, salt, and pepper. Stir to coat.
  5. Cook on low for 4–6 hours until sweet potatoes are tender.
  6. Taste and adjust seasoning if needed. Stir in lemon juice.
  7. Top with sliced avocado, pumpkin seeds, and fresh herbs before serving.

Notes

For extra flavor, roast sweet potatoes before adding to the slow cooker. Use homemade broth for richer taste. Avoid overcrowding and season generously.
