  • 12 oz linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup white wine
  • 1 tablespoon lemon juice
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • Optional: 1 cup cherry tomatoes, halved
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional: 1 tablespoon capers
  • Optional: Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Drain and reserve some pasta water.
  2. Pat shrimp dry with paper towels and season with salt and pepper.
  3. Finely mince garlic and chop parsley for garnish.
  4. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute.
  5. Increase heat to medium-high, add shrimp, and cook 2–3 minutes per side until pink and opaque. Remove and set aside.
  6. In the same skillet, add white wine and simmer for 2–3 minutes to reduce.
  7. Add lemon juice and stir. Return shrimp and linguine to skillet, tossing to coat. Add pasta water if needed.
  8. Stir in parsley, season to taste, and remove from heat. Add optional ingredients as desired.

Notes

Dry shrimp thoroughly before cooking for best sear. Use fresh lemon juice and avoid overcooking shrimp. Deglazing with wine adds richness to the sauce.
