  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

  • Optional: 1 tablespoon nutritional yeast

Instructions

  1. Whisk eggs and almond milk together in a large bowl. Add nutmeg, salt, and pepper; whisk until well combined.
  2. Preheat a non-stick skillet over medium heat and add 1 tablespoon olive oil. Sauté garlic until fragrant, about 1 minute.
  3. Add mushrooms and cook until golden brown and moisture is released, about 5-7 minutes.
  4. Add spinach and cook until wilted, about 2 minutes. Remove from skillet and set aside.
  5. Dip each slice of bread into the egg mixture, coating both sides.
  6. Add remaining olive oil to the skillet and heat over medium. Cook bread slices for 3-4 minutes per side, until golden brown.
