Savory Sauteed Zucchini Mushrooms And Onions Recipe

A bright, wholesome vegetable sauté featuring tender zucchini, savory mushrooms, and sweet caramelized onions. Simple, nourishing, and packed with flavor, this dish is perfect as a side or a plant-based main.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup button mushrooms, sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup parmesan cheese (optional)
  • 1 teaspoon red chili flakes (optional)
  • Lemon juice, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Wash and dry the zucchinis and mushrooms.
  2. Slice the zucchinis into rounds and the mushrooms into thick slices.
  3. Peel and thinly slice the onion.
  4. Mince the garlic cloves.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add the onions and sauté for about 5 minutes until softened.
  7. Add the garlic and cook for 1 minute until fragrant.
  8. Add zucchini and mushrooms and stir to combine.
  9. Season with salt, pepper, and thyme.
  10. Cook for 10–12 minutes, stirring occasionally, until tender and lightly caramelized.
  11. Add parmesan cheese during the last 2 minutes if using.
  12. Finish with lemon juice and garnish with fresh parsley before serving.

Notes

Do not overcrowd the pan to ensure proper sautéing. Stir occasionally and allow vegetables to brown for the best flavor and texture.
