  • 2 large sweet potatoes, washed and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Optional: 1 tablespoon fresh rosemary, chopped
  • Optional: 1 tablespoon honey or maple syrup
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash and dry the sweet potatoes thoroughly, then slice into 1/4-inch thick rounds.
  3. In a mixing bowl, combine olive oil, sea salt, black pepper, smoked paprika, and garlic powder.
  4. Add sweet potato slices to the bowl and toss to coat evenly.
  5. Arrange the rounds in a single layer on the baking sheet, avoiding overlap.
  6. Roast in the oven for 20 minutes, flipping halfway through.
  7. If using rosemary or Parmesan, add during the last 5 minutes of roasting.
  8. Remove from oven when edges are crisp and centers are tender.
  9. Let cool slightly before serving.

Notes

For best results, slice sweet potatoes evenly and avoid overcrowding the pan. Flip halfway for even roasting. Store leftovers in the fridge for up to 4 days and reheat in oven at 350°F (175°C) for 5-7 minutes.
