A warm, nourishing plant-based bowl featuring wild rice, creamy coconut milk, seasonal vegetables, and aromatic spices perfect for soul-soothing comfort.

Ingredients

  • 2 cups of wild rice
  • 1 can (15 oz) of coconut milk
  • 3 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 cups of butternut squash, cubed
  • 1 cup of kale, chopped
  • 1 teaspoon of turmeric
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Optional: 1/2 cup of toasted almonds
  • Optional: 1/4 cup of nutritional yeast
  • Optional: 1 tablespoon of lemon juice
  • Optional: Fresh herbs for garnish (parsley, cilantro)

Instructions

  1. Rinse wild rice under cold water to remove excess starch.
  2. Dice onion, mince garlic, cube butternut squash, and chop kale. Set aside.
  3. Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until translucent.
  4. Add minced garlic and cook for 1 minute, stirring continuously.
  5. Add cubed butternut squash and stir to coat with onion-garlic mixture.
  6. Pour in vegetable broth and coconut milk. Stir to combine and bring to a gentle boil.
  7. Add wild rice, turmeric, smoked paprika, salt, and pepper. Stir well.
  8. Reduce heat to low, cover, and simmer for 45 minutes.
  9. In the last 15 minutes, add chopped kale and allow it to wilt.
  10. Once rice is tender and liquid is absorbed, remove from heat.
  11. Stir in optional nutritional yeast or lemon juice if desired.
  12. Garnish with toasted almonds and fresh herbs before serving.

Notes

For extra creaminess, blend a portion of the cooked squash with coconut milk and return it to the pot. Monitor liquid levels to prevent burning.
