  • 4 large eggs
  • 2 tablespoons milk or plant-based milk
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Optional: 2 tablespoons cooked and crumbled turkey sausage
  • Optional: 1/4 cup diced tomatoes
  • Optional: 1 tablespoon chopped fresh herbs (parsley, chives, or basil)
  • Optional: 1/4 avocado, sliced

Instructions

  1. Prep all ingredients: chop vegetables and herbs, shred cheese, and have everything ready.
  2. In a bowl, whisk the eggs with milk, salt, and pepper until frothy.
  3. Heat a non-stick skillet over medium heat and add olive oil or butter.
  4. Sauté diced onions and bell peppers for 3–4 minutes until soft.
  5. Add chopped spinach and cook for 1 more minute until wilted.
  6. Pour egg mixture into skillet and cook for 1–2 minutes until edges set.
  7. Sprinkle cheese on one half and add optional fillings.
  8. Fold omelet in half and cook 1–2 more minutes until cheese melts and eggs are cooked through.
  9. Serve hot with fresh herbs on top.

Notes

Avoid overcooking to keep the omelet soft and fluffy. Use medium-low heat for best texture and don’t overload with fillings to maintain structure.
