  • 4 medium-sized russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup fresh chives, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1/4 cup crumbled bacon
  • Optional: 1/2 cup sour cream
  • Optional: 1/4 cup diced jalapenos

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and dry the potatoes. Slice into 1/4-inch thick rounds.
  3. In a bowl, toss the slices with olive oil, salt, and pepper.
  4. Arrange slices on the baking sheet in a single layer and bake for 20 minutes.
  5. Flip each slice and bake for another 10 minutes.
  6. Sprinkle cheddar and chopped chives evenly on top.
  7. Bake an additional 5–7 minutes until cheese is melted and bubbly.
  8. Let cool a few minutes before serving.

Notes

For crispier results, use a wire rack over the baking sheet. Freshly grated cheddar melts better than pre-shredded. Avoid overcrowding the pan for best texture.
