Deliciously Simple Pesto Shrimp Mushroom Pasta

A vibrant, nourishing pasta dish made with succulent shrimp, earthy mushrooms, and aromatic pesto tossed with perfectly cooked pasta.

  • 200g pasta (spaghetti, linguine, or penne)
  • 300g raw shrimp, peeled and deveined
  • 200g mushrooms, sliced (button or cremini)
  • 1 cup pesto (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish
  • Optional: Handful of cherry tomatoes, halved
  • Optional: Spinach or arugula
  • Optional: Red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
  2. While the pasta cooks, mince garlic, slice mushrooms, and prepare the shrimp.
  3. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  4. Add mushrooms and cook for 5-7 minutes until browned and moisture is released.
  5. Increase heat to medium-high. Add shrimp and cook for 3-4 minutes per side until pink and opaque.
  6. Reduce heat to low, stir in pesto, and add reserved pasta water as needed for desired sauce consistency.
  7. Combine cooked pasta with shrimp and mushroom mixture. Toss to coat in pesto sauce.
  8. Season with salt and pepper. Garnish with Parmesan and optional red pepper flakes.

Notes

Marinate shrimp in lemon juice and zest for extra flavor. Use high-quality olive oil and don’t overcook shrimp for best results.
