Delicious Pesto Shrimp Mushroom Pasta for a Healthy Meal

A vibrant and nourishing pasta dish featuring shrimp, mushrooms, and basil pesto. Simple to make and bursting with flavor, it’s a weeknight favorite that delivers on both taste and health.

Ingredients

  • 12 oz of spaghetti or preferred pasta
  • 1 lb of shrimp, peeled and deveined
  • 8 oz of mushrooms, sliced
  • 1 cup of basil pesto
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of pine nuts, toasted
  • Fresh basil leaves for garnish
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/2 cup spinach or kale
  • Optional: Lemon zest
  • Optional: Red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add shrimp and cook 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.
  3. Add remaining tablespoon olive oil to skillet. Sauté minced garlic for 1 minute until fragrant.
  4. Add sliced mushrooms and cook for 5-7 minutes until golden brown and tender.
  5. Drain pasta, reserving 1/2 cup pasta water.
  6. Add shrimp back to skillet with mushrooms. Stir in basil pesto and mix well.
  7. Combine cooked pasta with shrimp and mushroom mixture. Add reserved pasta water as needed to loosen sauce.
  8. Season with salt and pepper to taste. Toss in Parmesan and toasted pine nuts.
  9. Serve hot, garnished with basil and optional add-ins like tomatoes or spinach.

Notes

Use fresh, high-quality pesto for best flavor. Don’t overcook shrimp; they should be just pink and slightly curled. Avoid overcrowding mushrooms in the pan to ensure proper browning.
