One Pan Balsamic Steak and Veggies: A Flavorful Weeknight Delight

A flavorful and nutritious one-pan meal featuring juicy steak, vibrant vegetables, and a tangy balsamic glaze perfect for busy weeknights or entertaining guests.

  • 1 pound (450g) flank steak, sliced into strips
  • 1 cup cherry tomatoes, halved
  • 1 large zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1/2 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Optional: 1/2 teaspoon red pepper flakes
  • Optional: 1 tablespoon honey
  • Optional: 1/4 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, 2 tbsp olive oil, minced garlic, salt, pepper, and honey if using.
  3. Slice flank steak into thin strips against the grain.
  4. Prepare the vegetables: halve cherry tomatoes, slice zucchini, cut bell peppers into strips, and break broccoli into florets.
  5. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear steak strips for 2–3 minutes per side until browned. Remove and set aside.
  7. In the same skillet, add vegetables. Season with salt, pepper, and red pepper flakes if using. Sauté for 5 minutes.
  8. Return steak to the skillet and pour balsamic glaze over everything. Stir to coat.
  9. Transfer skillet to the oven and roast for 10–15 minutes until steak is cooked and vegetables are tender.
  10. Remove from oven, garnish with fresh basil, and serve hot.

Notes

For best results, marinate the steak in the glaze for 30 minutes before cooking. Avoid overcrowding the pan to ensure proper searing. Always slice steak against the grain for tenderness.
