Mushroom Garlic Shrimp Pasta: A Deliciously Simple Delight

A flavorful and nutritious pasta dish featuring tender shrimp, earthy mushrooms, and fragrant garlic in a light, savory sauce.

  • 8 oz (225g) of linguine pasta
  • 1 lb (450g) of shrimp, peeled and deveined
  • 2 cups of cremini or button mushrooms, sliced
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/2 cup of white wine (optional)
  • 1/2 cup of chicken or vegetable broth
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons of chopped fresh parsley
  • 1 tablespoon of lemon juice
  • Optional: 1/4 teaspoon of red pepper flakes
  • Optional: 1/2 cup of heavy cream
  • Optional: 1 tablespoon of butter

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. Pat dry the shrimp and season with salt and pepper.
  3. Slice mushrooms and mince the garlic.
  4. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 30 seconds.
  5. Add mushrooms and cook for 5 minutes until golden and soft.
  6. Push mushrooms to one side of the skillet and add the shrimp. Cook for 2 minutes on each side until pink and opaque.
  7. Add white wine (if using) and simmer for 2 minutes.
  8. Add chicken or vegetable broth and simmer for another 2-3 minutes.
  9. Stir in the cooked pasta and Parmesan cheese, tossing to combine.
  10. Finish with lemon juice, fresh parsley, and season with additional salt and pepper to taste.

Notes

Avoid overcooking the shrimp to maintain tenderness. Do not overcrowd the pan when cooking mushrooms to achieve a golden, sautéed texture.
