Mia’s Mushroom Garlic Shrimp Pasta: A Wholesome Delight

A luscious and healthy pasta dish made with shrimp, mushrooms, garlic, and creamy Parmesan sauce – perfect for a cozy dinner or elegant meal.

  • 12 oz (340g) linguine or spaghetti
  • 8 oz (225g) shrimp, peeled and deveined
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup (60ml) white wine or chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (25g) grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: 1 cup (150g) cherry tomatoes, halved
  • Optional: 1/2 cup (75g) baby spinach
  • Optional: Zest of 1 lemon
  • Optional: 1/4 cup (30g) toasted pine nuts

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Pat dry the shrimp and season with salt and pepper.
  3. Slice mushrooms and mince garlic; set aside.
  4. Heat olive oil in a large skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove and set aside.
  5. Add more olive oil if needed. Sauté garlic for 30 seconds until fragrant.
  6. Add mushrooms and cook for 5-7 minutes until tender and golden.
  7. Optional: Add red pepper flakes for heat.
  8. Deglaze with wine or broth, scraping up browned bits. Reduce by half.
  9. Lower heat, stir in heavy cream, and simmer until slightly thickened.
  10. Return shrimp to skillet and coat in sauce.
  11. Add pasta and reserved pasta water; toss to combine.
  12. Stir in Parmesan cheese until creamy.
  13. Season to taste and garnish with fresh parsley.

Notes

Use fresh ingredients for best results. Avoid overcooking the shrimp. Let mushrooms brown for deeper flavor.
