Delightful Mixed Berry Tart Recipe for a Vibrant Dessert

  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup coconut sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Optional: 1 teaspoon lemon zest
  • Optional: 1 tablespoon chia seeds

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch tart pan.
  2. In a large mixing bowl, combine whole wheat flour, coconut sugar, and salt.
  3. Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  5. Press the dough into the prepared tart pan, ensuring it’s evenly spread across the bottom and up the sides. Prick the base with a fork to prevent bubbling.
  6. In a separate bowl, combine the berries, maple syrup, lemon juice, cornstarch, and vanilla extract. Stir gently to coat the berries thoroughly.
  7. Pour the berry mixture into the prepared crust, spreading it evenly.
  8. If desired, sprinkle lemon zest and chia seeds over the top for added flavor and texture.
  9. Bake the tart in the preheated oven for 35-40 minutes or until the crust is golden brown and the berries are bubbling.
  10. Remove from the oven and allow the tart to cool for at least 15 minutes before serving.

Notes

Use fresh, ripe berries for best flavor. Chill the dough before baking to help maintain its shape. Don’t overmix the dough or overbake the tart to keep texture and moisture perfect.
