Savor the Season with a Delightful Mixed Berry Tart

A vibrant and elegant tart that combines a buttery homemade crust with a medley of fresh summer berries, perfect for healthy and joyful eating.

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 1/2 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tablespoons cornstarch
  • 1/4 cup honey or maple syrup
  • Zest of one lemon
  • Optional: 1/4 teaspoon almond extract
  • Optional: 1 tablespoon chia seeds
  • Optional: 2 tablespoons sliced almonds for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix flour and sugar. Add chilled butter and mix until coarse crumbs form.
  3. Add cold water and vanilla, mixing just until dough forms. Shape into a disk, wrap, and chill for 30 minutes.
  4. Roll dough on floured surface and fit into tart pan. Trim edges.
  5. In a bowl, toss berries with cornstarch, honey or maple syrup, and lemon zest.
  6. Spread berry mixture into prepared crust.
  7. Bake for 40-45 minutes until crust is golden and filling is bubbly.
  8. Cool to room temperature before serving.

Notes

Keep butter cold for a flaky crust and avoid over-mixing the dough. Use cornstarch to prevent a runny filling. Dough and crust can be made ahead for convenience.
