Delicious and Nutritious Mini Crustless Quiches

Mini Crustless Quiches are light, nutritious, and endlessly customizable bites perfect for any time of day from brunch spreads to on-the-go snacks.

  • 6 large eggs
  • 1 cup milk (or plant-based milk)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Optional: 1/4 cup cooked and crumbled bacon or ham
  • Optional: 1/4 cup sliced mushrooms
  • Optional: 1/4 cup feta cheese
  • Optional: Fresh herbs like chives or parsley

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone liners.
  2. In a large mixing bowl, whisk together eggs and milk.
  3. Add cheddar cheese, bell peppers, spinach, onions, salt, and pepper. Stir to combine.
  4. Pour mixture into muffin tins, filling each about 3/4 full.
  5. Sprinkle optional add-ins over the top of each quiche, if using.
  6. Bake for 20–25 minutes until puffed and golden brown.
  7. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Beat eggs vigorously for a fluffier texture. Combine cheeses for added depth. Don’t overfill muffin tins and avoid overbaking to prevent rubbery texture.
