Fluffy Matcha Cake Recipe–Soft, Vibrant & Easy to Bake

A vibrant, fluffy, and antioxidant-rich matcha cake that balances earthy green tea flavor with just the right amount of sweetness. Perfect for tea time, birthdays, or as a healthier dessert option.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 12 tbsp matcha powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup milk (or plant-based milk)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a cake pan with parchment paper.
  2. Sift flour, baking powder, salt, and matcha powder together in a bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually add dry ingredients, alternating with milk. Mix gently until just combined.
  6. Pour batter into prepared pan and smooth the surface.
  7. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optional: Frost with cream cheese frosting, white chocolate ganache, or matcha buttercream.

Notes

Use fresh, bright green matcha powder for the best color and flavor. Avoid overmixing to keep the cake light and fluffy.
