Marry Me Shrimp Pasta: A Delicious and Romantic Dinner

A rich, creamy, and flavorful shrimp pasta dish that combines sun-dried tomatoes, parmesan, and herbs for an unforgettable meal perfect for date nights or special occasions.

  • 12 oz (340 g) shrimp, peeled and deveined
  • 8 oz (225 g) fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth or vegetable broth
  • 1/2 cup (50 g) freshly grated parmesan cheese
  • 1/4 cup (35 g) sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Optional: 1 cup (150 g) baby spinach
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 1/4 cup (60 ml) white wine
  • Optional: 1/4 cup (30 g) toasted pine nuts

Instructions

  1. Gather and prep all ingredients: mince garlic, chop sun-dried tomatoes, and grate parmesan.
  2. Rinse shrimp and pat dry. Season with salt and pepper.
  3. Boil pasta in salted water until al dente. Drain and set aside.
  4. Heat olive oil in a large skillet over medium heat. Sauté garlic for 1 minute.
  5. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
  6. In the same skillet, add broth, cream, and optional wine. Stir and scrape up browned bits.
  7. Add sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Simmer 5–7 minutes until thickened.
  8. Stir in parmesan until melted. Adjust seasoning to taste.
  9. Add cooked pasta and shrimp to the sauce and toss to coat.
  10. Optional: Add spinach and stir until wilted.
  11. Garnish with fresh basil and toasted pine nuts before serving.

Notes

Do not overcrowd the shrimp in the pan for even cooking. Always use freshly grated parmesan for best texture and flavor. Taste sauce before adding more salt to avoid over-seasoning if using salted broth.
