  • 1 cup green or brown lentils, rinsed and drained
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 cups baby spinach
  • 1 avocado, sliced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Optional: 1/4 cup crumbled feta cheese
  • Optional: 1/4 cup toasted pumpkin seeds
  • Optional: Fresh herbs like parsley or cilantro
  • Optional: 1 tablespoon tahini for a creamy dressing
  • Optional: 2 tablespoons roasted sunflower seeds

Instructions

  1. Rinse the lentils under cold water and remove any debris.
  2. Dice the red bell pepper and cucumber, halve the cherry tomatoes, and slice the avocado.
  3. Juice the lemon and set aside.
  4. In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until tender.
  5. In a skillet, heat olive oil over medium heat. Add cumin seeds and toast for 1 minute.
  6. Add diced red bell pepper to the skillet and sauté for 5 minutes until softened.
  7. Once lentils are cooked, remove from heat and let cool slightly.
  8. In a large bowl, mix lentils, sautéed bell pepper, cherry tomatoes, cucumber, and baby spinach.
  9. Drizzle with lemon juice and season with salt and pepper. Toss to combine.
  10. Top with sliced avocado and any optional add-ins like feta, seeds, or herbs.

Notes

Adjust lemon juice and salt to taste. Use ripe avocado for the best texture. Avoid overcooking lentils to maintain a firm bite.
