Ingredients

Scale
  • 8 oz white chocolate, finely chopped
  • 1/4 cup heavy cream
  • Zest of 2 lemons
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon lemon juice for extra tang
  • Optional: 1/4 cup finely chopped nuts (e.g., pistachios or almonds)
  • Optional: 1 tablespoon powdered sugar for dusting

Instructions

  1. Gather all ingredients and finely chop the white chocolate for easier melting.
  2. Wash lemons thoroughly and zest them using a microplane or fine grater.
  3. In a heatproof bowl, combine white chocolate, heavy cream, and butter. Place over a pot of simmering water (bain-marie) and stir until smooth and melted.
  4. Remove from heat and stir in lemon zest and vanilla extract. Add lemon juice if desired.
  5. Pour mixture into a shallow dish and refrigerate for at least 2 hours or until firm.
  6. Once firm, use a melon baller or teaspoon to scoop and roll into balls by hand.
  7. Roll truffles in chopped nuts or powdered sugar for decoration if desired.

Notes

Use high-quality white chocolate for best melting and flavor. Avoid zesting the bitter white pith of lemons. Always chill mixture thoroughly before forming truffles.
