These Lemon Garlic Herb Chicken Thighs are juicy, flavorful, and easy to make the perfect weeknight dinner with a burst of citrus and herb aroma.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon honey (optional)
  • 1/4 cup chopped parsley for garnish (optional)

Instructions

  1. In a large bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
  2. Add chicken thighs and coat evenly. Cover and marinate in the refrigerator for at least 1 hour or overnight.
  3. Preheat oven to 400°F (200°C) and let chicken sit at room temperature while oven heats.
  4. In a large oven-safe skillet, heat 1 tablespoon olive oil over medium-high heat.
  5. Sear chicken thighs skin-side down for 5 minutes until golden and crispy.
  6. Flip chicken and transfer skillet to oven. Bake for 25-30 minutes, until internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving. Garnish with parsley and lemon slices if desired.

Notes

Avoid overcrowding the pan during searing for crispier skin. Always let the chicken rest before serving to keep it juicy. Try grilling instead of baking for a smoky flavor.
