This lemon and broccoli pasta with shrimp is a vibrant, nutrient-packed dish that combines zesty citrus, fresh vegetables, and lean protein for a quick and delicious meal.

  • 8 oz (225g) of whole wheat pasta
  • 1 lb (450g) of shrimp, peeled and deveined
  • 2 cups of broccoli florets
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • Juice and zest of 1 large lemon
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: 1/4 cup of sun-dried tomatoes, chopped
  • Optional: 1/4 teaspoon of red pepper flakes
  • Optional: Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente, drain and set aside.
  2. Pat shrimp dry and season with salt and pepper.
  3. Chop broccoli into bite-sized florets and mince garlic.
  4. In a large skillet, heat olive oil over medium heat. Sauté garlic for 1 minute until fragrant.
  5. Add shrimp and cook 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.
  6. In the same skillet, sauté broccoli for 4-5 minutes until tender-crisp.
  7. Return shrimp to skillet, add cooked pasta, and toss together.
  8. Add lemon juice and zest, stir well to coat evenly.
  9. Sprinkle with Parmesan cheese, add any optional add-ins, and toss again.
  10. Season with additional salt and pepper as needed. Serve immediately.

Notes

For best flavor, use fresh lemon juice and avoid overcrowding the pan when searing shrimp. Don’t overcook the shrimp to maintain a tender texture.
