Ingredients

  • 1/4 cup coconut flour
  • 2 tbsp chia seeds
  • 1/4 cup sugar-free chocolate chips
  • 2 tbsp erythritol or monk fruit (to taste)
  • 1 tsp vanilla extract
  • 1 tbsp MCT oil or coconut oil
  • Pinch of sea salt

Instructions

  1. In a medium mixing bowl, combine almond butter, coconut flour, and sweetener.
  2. Stir in chia seeds, vanilla, chocolate chips, and oil.
  3. Mix until a thick, dough-like consistency forms. If it’s too dry, add a teaspoon of nut milk.
  4. Roll into 1-inch balls using clean hands or a small cookie scoop.
  5. Place on a parchment-lined tray and refrigerate for 30 minutes before serving.

Notes

Store in an airtight container in the fridge for up to 2 weeks or freeze for longer shelf life. Add collagen peptides or MCT oil for extra health benefits.
