  • 1 cup basmati rice
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 large tomato, diced
  • 1 cup chickpeas, cooked or canned
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lemon wedges for serving
  • Optional: 1/2 cup raisins
  • Optional: 1/4 cup slivered almonds
  • Optional: 1/2 cup coconut milk
  • Optional: 1/2 teaspoon chili flakes

Instructions

  1. Rinse the basmati rice under cold water until clear and soak for 20 minutes.
  2. Prepare and chop all vegetables and gather spices.
  3. Heat olive oil in a skillet over medium heat, add cumin seeds, and let them sizzle.
  4. Add chopped onion and sauté until golden, then add garlic and cook for another minute.
  5. Stir in turmeric, coriander powder, and garam masala.
  6. Add diced tomato and cook until softened, about 5 minutes.
  7. Drain the rice and add it to the skillet, stirring to coat with spices.
  8. Add chickpeas, bell pepper, and zucchini. Pour in 2 cups of water, season with salt and pepper.
  9. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until rice is cooked and water absorbed.
  10. Let sit covered for 5 minutes. Fluff and garnish with cilantro and lemon wedges before serving.

Notes

Use fresh, high-quality spices and basmati rice. Avoid lifting the lid during cooking and rinse rice thoroughly for best results.
