Delight in the Flavors of Hungarian Mushroom Soup

A creamy, comforting, and flavor-packed soup infused with earthy mushrooms, Hungarian paprika, and fresh herbs – perfect for cozy days.

  • 2 tablespoons of butter
  • 1 large onion, finely chopped
  • 1 pound of fresh mushrooms, sliced
  • 2 teaspoons of Hungarian paprika
  • 1 teaspoon of dried thyme
  • 1/2 cup of dry white wine
  • 2 cups of chicken or vegetable broth
  • 1 cup of sour cream
  • 3 tablespoons of all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons of fresh dill, chopped
  • Optional: 1/4 cup of heavy cream
  • Optional: Chopped fresh parsley for garnish
  • Optional: A dash of lemon juice

Instructions

  1. Clean mushrooms with a damp cloth and slice thinly.
  2. Finely chop the onion and gather all ingredients.
  3. Melt butter in a large pot over medium heat and sauté onions until translucent, about 5 minutes.
  4. Add mushrooms and cook until browned and moisture is released, around 10 minutes.
  5. Stir in paprika and thyme, cooking for 1 minute more.
  6. Pour in white wine and simmer until reduced by half.
  7. Add broth and simmer for 15 minutes.
  8. Whisk flour into sour cream until smooth; temper with a ladle of hot soup, then stir back into pot.
  9. Simmer for 10 minutes more, stirring until thickened.
  10. Season with salt and pepper, stir in fresh dill, and serve warm.

Notes

Use high-quality Hungarian paprika for best flavor. Avoid boiling after adding sour cream to prevent curdling. Roast mushrooms beforehand for a deeper taste. For vegan version, use olive oil and plant-based sour cream.
