  • 3 tablespoons of honey
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 4 oz (115g) of crumbled feta cheese
  • 1 tablespoon of fresh parsley, chopped
  • Optional: 1 teaspoon of lemon zest
  • Optional: A pinch of red pepper flakes
  • Optional: 1 tablespoon of toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together honey, olive oil, balsamic vinegar, salt, and pepper.
  3. Add the carrot sticks and toss until evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Bake for 20–25 minutes, tossing halfway through, until tender and caramelized.
  6. Remove from oven and cool slightly. Transfer to a serving platter.
  7. Sprinkle with crumbled feta and garnish with parsley and any optional toppings.

Notes

Use fresh, organic carrots for the best flavor. Avoid overcrowding the pan to ensure proper roasting. Tossing halfway through is key for even caramelization.
