Deliciously Vibrant Honey Glazed Carrots & Green Beans Recipe

A simple, colorful, and flavorful side dish featuring tender carrots and crisp green beans tossed in a glossy honey glaze.

  • 1 pound carrots, peeled and sliced into 1/4 inch rounds
  • 1 pound green beans, trimmed
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 teaspoon fresh rosemary, chopped (optional)
  • 1 tablespoon lemon zest (optional)
  • 1/4 cup toasted almonds or walnuts (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the carrots and green beans thoroughly.
  3. Peel and slice the carrots into 1/4 inch rounds.
  4. Trim the ends of the green beans.
  5. In a small bowl, whisk together honey, olive oil, apple cider vinegar, salt, and pepper.
  6. In a large bowl, combine carrots and green beans.
  7. Pour the honey mixture over the vegetables and toss to coat evenly.
  8. Spread the vegetables in a single layer on a parchment-lined baking sheet.
  9. Roast for 20–25 minutes until carrots are tender and green beans are lightly crispy.
  10. Sprinkle fresh herbs during the last 5 minutes if using.
  11. Remove from the oven and let cool slightly before serving.

Notes

Avoid overcrowding the baking sheet to ensure proper roasting and caramelization.
