  • 2 cups kale, chopped
  • 1 sweet potato, diced
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced

  • 1/4 cup pumpkin seeds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Cook the quinoa or brown rice according to package instructions. Fluff and set aside.
  2. Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, paprika, cumin, salt, and pepper. Roast for 25-30 minutes until tender.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté chopped kale for about 5 minutes until wilted. Season with salt and lemon juice.
  4. In the same skillet, sauté chickpeas with a sprinkle of smoked paprika for 5 minutes until warmed and slightly crispy.
  5. Assemble the bowls with grains, roasted sweet potatoes, sautéed kale, and chickpeas. Add avocado, pomegranate seeds, and pumpkin seeds.
  6. Optional: Top with grilled chicken or tofu, sprinkle with feta cheese, and drizzle with tahini dressing.
  7. Finish with a squeeze of lemon juice and a final seasoning of salt and pepper.
