Ingredients

Scale
  • 1 cup wild rice
  • 2 cups water or vegetable broth
  • 1 medium head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 avocado, sliced
  • 1/4 cup pomegranate seeds
  • Optional: 1/4 cup feta cheese, crumbled
  • Optional: 1/4 cup toasted almonds or walnuts
  • Optional: Fresh herbs such as parsley or cilantro, chopped

Instructions

  1. Rinse wild rice under cold water. In a medium saucepan, combine rice with water or broth. Bring to a boil, reduce heat to low, cover, and simmer for 45-50 minutes until tender and liquid is absorbed.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Toss cauliflower florets with olive oil, turmeric, salt, and pepper. Spread evenly on baking sheet.
  4. Roast cauliflower for 25-30 minutes until golden brown and tender.
  5. Prepare lemon tahini dressing: whisk 1/4 cup tahini, juice of 1 lemon, 1 tbsp maple syrup, 2 tbsp water, and a pinch of salt.
  6. In a large bowl, combine cooked rice, roasted cauliflower, chickpeas, and spinach.
  7. Drizzle with lemon tahini dressing and toss to combine.
  8. Top each serving with sliced avocado, pomegranate seeds, and any optional add-ins.

Notes

Cut cauliflower into even florets for uniform roasting. Avoid overcooking the rice to maintain texture. Keep dressing separate until serving to preserve freshness.
