  • 2 cups mixed leafy greens (such as spinach, arugula, and kale)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1 cup cooked quinoa
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup nuts or seeds (such as almonds, walnuts, or sunflower seeds)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: Grilled chicken or tofu
  • Optional: 1/4 cup dried cranberries or raisins
  • Optional: 1/4 cup olives
  • Optional: Lemon juice for extra tang

Instructions

  1. Wash all vegetables and greens thoroughly. Dry them with a clean towel or salad spinner.
  2. Cook quinoa according to package directions. Let it cool.
  3. In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red bell pepper, quinoa, red onion, and avocado.
  4. Top with feta cheese and nuts or seeds.
  5. In a separate bowl, whisk olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
  6. Drizzle dressing over the salad and toss gently to coat.
  7. Add optional ingredients such as grilled chicken, cranberries, or olives if desired.
  8. Serve immediately or refrigerate briefly to meld flavors.

Notes

Roast the nuts or seeds for deeper flavor. Taste the dressing before adding to adjust seasoning. Don’t overdress to avoid soggy greens.
