A nutritious twist on the classic Spanish tapas dish, these Healthy Patatas Bravas feature crispy roasted sweet potatoes paired with a bold, spicy tomato sauce. Perfectly vegan, gluten-free, and bursting with flavor.

  • 2 large sweet potatoes, peeled and cubed (about 4 cups)
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups fresh tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • Optional: 1/4 cup chopped fresh parsley for garnish
  • Optional: 1/2 cup vegan aioli for dipping
  • Optional: 1/4 teaspoon turmeric

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes with 2 tablespoons of olive oil, smoked paprika, sea salt, and black pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  4. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
  5. While baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
  6. Add diced tomatoes, cayenne pepper, apple cider vinegar, and tomato paste. Stir and simmer for 10-15 minutes until thickened.
  7. Transfer roasted sweet potatoes to a platter. Top with the spicy tomato sauce and garnish with parsley if desired.
  8. Serve with vegan aioli on the side for dipping.

Notes

For extra crispiness, ensure sweet potatoes are spread in a single layer on the baking sheet. Use fresh tomatoes for the best flavor and don’t forget to flip potatoes halfway through baking. Adjust cayenne to your spice preference.
