  • 1 pound (450g) boneless, skinless chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup unsalted peanuts
  • 46 dried red chilies
  • 2 scallions, chopped
  • 1/4 cup chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • Optional: 1 zucchini, sliced
  • Optional: 1/2 cup sliced water chestnuts
  • Optional: Sriracha or chili paste
  • Optional: 1 tablespoon hoisin sauce

Instructions

  1. In a bowl, combine diced chicken with soy sauce and cornstarch. Marinate for at least 15 minutes.
  2. Prep vegetables: dice bell peppers, mince garlic, grate ginger.
  3. Heat 1 tablespoon oil in a skillet or wok over medium-high heat. Cook marinated chicken for 5-7 minutes until golden. Set aside.
  4. In the same pan, heat remaining oil. Sauté garlic, ginger, and chilies for 30 seconds.
  5. Add diced bell peppers. Stir-fry for 2-3 minutes.
  6. Return chicken to pan. Add peanuts and mix.
  7. In a bowl, whisk chicken broth, rice vinegar, sesame oil, and sugar. Pour over chicken. Stir to coat.
  8. Cook for 2-3 more minutes until sauce thickens.
  9. Garnish with scallions and serve hot.

Notes

Use a hot pan to sear the chicken properly. Don’t overcrowd the pan; cook in batches. Avoid overcooking garlic to prevent bitterness.
