  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup cooked brown rice
  • 1/4 cup soy sauce (for sauce)
  • 3 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar (for sauce)
  • 2 tablespoons honey
  • 1 teaspoon sesame seeds (optional)
  • 1 tablespoon chopped green onions (optional)
  • 1 teaspoon chili flakes (optional)

Instructions

  1. In a medium bowl, combine chicken pieces with soy sauce and rice vinegar.
  2. Marinate for at least 15 minutes.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and honey to prepare the sauce.
  4. Coat marinated chicken evenly with cornstarch.
  5. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat.
  6. Cook chicken 5-7 minutes until golden brown and cooked through.
  7. Remove chicken from skillet and set aside.
  8. Add remaining oil to the skillet.
  9. Sauté broccoli and red bell pepper 4-5 minutes until tender-crisp.
  10. Return chicken to the skillet.
  11. Pour prepared sauce over chicken and vegetables.
  12. Simmer until sauce thickens and coats evenly.
  13. Serve over cooked brown rice.
  14. Garnish with sesame seeds, green onions, and chili flakes if desired.
