Aromatic Hawaiian Beef Stew: A Flavorful Island Escape

A tropical twist on classic comfort food, this Hawaiian Beef Stew features tender beef, hearty vegetables, and sweet pineapple for a bold and nourishing meal.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups beef broth
  • 1 cup pineapple juice
  • 2 tablespoons soy sauce
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 1 red bell pepper, chopped
  • 1 cup pineapple chunks
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon brown sugar (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Season beef cubes with salt and pepper.
  2. Chop onion, mince garlic, grate ginger, and slice carrots and potatoes. Set aside.
  3. In a large pot, heat vegetable oil over medium-high heat. Brown beef in batches and set aside.
  4. In the same pot, cook onion until translucent, about 5 minutes. Add garlic and ginger, cook 1 more minute.
  5. Return beef to pot. Add beef broth, pineapple juice, soy sauce, and tomato paste. Stir well.
  6. Bring to simmer, reduce heat, cover, and cook for 1 hour until beef is tender.
  7. Add carrots, potatoes, bell pepper, and pineapple chunks. Simmer 30-40 minutes until vegetables are tender.
  8. Adjust seasoning with salt, pepper, or soy sauce. For thicker stew, mash a few potatoes in the pot.
  9. Serve hot, garnished with fresh cilantro if desired.

Notes

Marinate beef in soy sauce, pineapple juice, and ginger for added flavor. Avoid overcrowding the pot while browning meat to ensure proper searing.
