Master the Art of a Grilled Chicken Three Cheese Sandwich

A rich, savory grilled chicken sandwich layered with sharp cheddar, creamy mozzarella, and tangy blue cheese, finished with garlic butter on whole-grain bread.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices of whole-grain bread
  • 2 tablespoons unsalted butter, softened
  • 1 garlic clove, minced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup blue cheese, crumbled
  • Optional: 1/4 cup caramelized onions
  • Optional: 1/4 cup sautéed mushrooms
  • Optional: Fresh arugula leaves
  • Optional: 1 tablespoon Dijon mustard

Instructions

  1. Preheat grill to medium-high heat.
  2. Pat chicken breasts dry, rub with olive oil, and season with salt and black pepper.
  3. Mix softened butter with minced garlic in a small bowl and set aside.
  4. Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F (75°C). Let rest.
  5. Spread garlic butter on one side of each bread slice.
  6. On non-buttered sides of two slices, layer cheddar, mozzarella, and blue cheese.
  7. Thinly slice grilled chicken and place over cheese layers.
  8. Add any optional toppings if using.
  9. Top with remaining bread slices, buttered side out.
  10. Grill sandwiches in a skillet over medium heat for 3-4 minutes per side, until golden brown and cheese is melted.
  11. Let cool for a minute, slice in half, and serve warm.

Notes

Use a panini press for an extra crispy finish. Don’t overload with cheese to maintain sandwich structure.
