  • 2 tablespoons of olive oil
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin seeds
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional: 1/2 cup of raisins
  • Optional: A handful of toasted almonds
  • Optional: 1/2 cup of diced bell peppers
  • Optional: 1 teaspoon of smoked paprika

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.
  3. Add chopped onion, garlic, and ginger. Sauté until onion is translucent.
  4. Stir in turmeric powder and cook for 1 minute.
  5. Add rinsed rice, stirring to coat with the spices.
  6. Pour in coconut milk and vegetable broth. Bring to a gentle boil.
  7. Reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
  8. Fluff the rice, stir in cooked chickpeas, and season with salt and pepper.
  9. Garnish with fresh cilantro and serve warm.

Notes

Use freshly grated ginger and high-quality coconut milk for best flavor. Toast rice briefly before adding liquids for a nutty aroma. Avoid lifting the lid too often while simmering to retain steam.
