Decadent Garlic Butter Shrimp Pasta: A Flavorful Feast

A vibrant and flavorful dish featuring succulent shrimp in a buttery garlic sauce, tossed with perfectly cooked pasta – ready in under 30 minutes.

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/4 cup olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/4 cup white wine
  • Optional: 1 cup baby spinach
  • Optional: 1/4 cup heavy cream
  • Optional: 1 tablespoon capers

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain and set pasta aside.
  2. Pat shrimp dry with paper towels and season with salt and pepper. Mince garlic and set aside.
  3. In a large skillet over medium heat, melt 2 tablespoons butter with 2 tablespoons olive oil. Add shrimp and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. In the same skillet, add remaining butter and olive oil. Add minced garlic and red pepper flakes, sauté until fragrant, about 1–2 minutes.
  5. Stir in lemon juice and optional white wine, scraping up bits from the pan. Simmer and reduce for about 2 minutes.
  6. Return shrimp to skillet, add pasta, and toss to coat in sauce. Gradually add reserved pasta water as needed for consistency.
  7. Stir in Parmesan and parsley. Season with additional salt and pepper to taste. Serve garnished with more parsley and cheese if desired.

Notes

Be careful not to overcook the shrimp. Use pasta water to create a luscious sauce that clings to the noodles.
