Ingredients

Scale
  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 tsp red pepper flakes
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/4 cup white wine
  • Optional: 1/4 cup heavy cream

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Pat the shrimp dry with paper towels and season with salt and pepper.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat. Cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  4. In the same skillet, melt the remaining 2 tablespoons of butter. Add garlic and sauté until fragrant, about 1 minute.
  5. If using, pour in the white wine and simmer for 2 minutes to reduce.
  6. Return shrimp to the skillet. Add cooked pasta, Parmesan cheese, and lemon juice. Toss to combine, adding reserved pasta water as needed to create a silky sauce.
  7. Season with additional salt and pepper, and garnish with chopped parsley before serving.

Notes

Avoid overcooking the shrimp—they should just turn pink. Use freshly grated Parmesan for best flavor and texture.
