  • 3 cups peeled, cored, and chopped apples (about 3 medium apples)
  • 2 cups whole wheat flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins or dried cranberries
  • Optional: 1 tablespoon freshly grated ginger

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a medium bowl, combine the whole wheat flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Peel, core, and chop the apples into small pieces. Set aside.
  4. In a large mixing bowl, whisk together the sugar, applesauce, and vegetable oil until well combined.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chopped apples and any optional add-ins, such as nuts or raisins.
  8. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  9. Bake in the preheated oven for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Use a mix of apple varieties for deeper flavor. Don’t overmix the batter to keep the cake tender. Store in an airtight container for up to 3 days at room temperature or freeze for longer storage.
