Delightfully Moist Fresh Apple Cake Recipe

A moist and spiced fresh apple cake that’s nourishing, comforting, and perfect for dessert, breakfast, or a snack.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • 3 cups peeled and chopped apples (Granny Smith or Honeycrisp)
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins or dried cranberries
  • Optional: 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, sift together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk melted butter and sugar until well combined.
  4. Add eggs one at a time, beating after each addition.
  5. Stir in vanilla extract.
  6. Gradually mix dry ingredients into wet ingredients until just combined.
  7. Fold in chopped apples and any optional add-ins.
  8. Pour batter into prepared pan and spread evenly.
  9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

Use crisp apples like Granny Smith or Honeycrisp. Don’t overmix the batter or open the oven door too often. Spoon and level flour when measuring for best results.
