Deliciously Simple Shrimp Linguine for Every Occasion

This shrimp linguine is a simple yet elegant dish that combines succulent shrimp, vibrant cherry tomatoes, and fresh herbs in a light, lemony sauce. Perfect for weeknight dinners or special occasions.

  • 1 lb linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (optional)
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional: 1/2 cup baby spinach
  • Optional: 1/4 cup capers

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente. Drain and set aside.
  2. Pat shrimp dry and season with salt and pepper.
  3. Chop parsley and set aside for garnish.
  4. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  5. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove and set aside.
  6. In the same skillet, add cherry tomatoes and cook 3–4 minutes until softened.
  7. Add white wine (if using) and simmer for 2 minutes.
  8. Return linguine to skillet with lemon juice, red pepper flakes, and half the parsley. Toss to combine.
  9. Return shrimp to the skillet and mix gently.
  10. Adjust seasoning. Add Parmesan and spinach if desired; let spinach wilt slightly.
  11. Remove from heat and garnish with remaining parsley. Serve immediately.

Notes

Avoid overcooking shrimp to keep them tender. Fresh lemon juice enhances the flavor. Don’t overcrowd the pan when cooking shrimp for best results.
