  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup dulce de leche
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into bottom of pan.
  3. In a large bowl, beat softened cream cheese until smooth.
  4. Add 1 cup sugar, dulce de leche, and vanilla extract; blend until smooth.
  5. Add eggs one at a time, mixing on low speed just until blended.
  6. Pour mixture over crust in springform pan.
  7. Bake for 55-60 minutes or until center is nearly set.
  8. Remove from oven, run knife around edge, and cool completely in pan on wire rack.
  9. Refrigerate for at least 4 hours or overnight before serving.

Notes

For a crack-free top, use a water bath and avoid overmixing after adding eggs. Serve chilled with a drizzle of dulce de leche and fresh berries if desired.
