Deliciously Creamy White Chicken Lasagna Soup Recipe

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Optional: 1/2 cup sun-dried tomatoes, chopped
  • Optional: 1/2 cup mushrooms, sliced

Instructions

  1. Gather all ingredients and organize your kitchen space.
  2. Dice chicken breasts, chop onion, and mince garlic.
  3. Break lasagna noodles into bite-sized pieces.
  4. In a large pot, heat olive oil over medium heat.
  5. Add diced chicken and cook until browned, 5–7 minutes. Remove and set aside.
  6. In the same pot, sauté chopped onion until translucent, about 3–4 minutes.
  7. Add garlic, basil, oregano, and red pepper flakes; cook 1 minute.
  8. Pour in chicken broth and bring to a simmer.
  9. Add broken lasagna noodles and cook until al dente, 8–10 minutes.
  10. Lower heat and stir in heavy cream, cooked chicken, and Parmesan cheese.
  11. Season with salt and pepper to taste.
  12. Add optional spinach, sun-dried tomatoes, or mushrooms if desired.
  13. Serve hot, garnished with fresh parsley and extra Parmesan if preferred.

Notes

Add a Parmesan rind during simmering for extra depth—remove before serving. Use cornstarch slurry for a thicker soup, and avoid overcooking noodles.
