Creamy Tomato and Lobster Pasta: A Decadent Delight for Dinner

A luxurious and comforting pasta dish combining creamy tomato sauce and sweet lobster, perfect for special occasions or indulgent meals.

  • 12 oz (340 g) linguine or pasta of choice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) tomato puree
  • 1/4 cup (60 ml) white wine
  • 1 lb (450 g) cooked lobster meat, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup (15 g) fresh basil, chopped
  • 1/4 cup (25 g) grated Parmesan cheese
  • Optional: baby spinach, sun-dried tomatoes, lemon zest

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and shallot, sauté until fragrant and translucent (2-3 minutes).
  3. Pour in white wine, simmer and reduce by half.
  4. Stir in tomato puree and heavy cream. Season with salt, black pepper, and red pepper flakes.
  5. Add cooked lobster meat, stirring gently to coat in the sauce.
  6. Combine cooked pasta with the sauce, tossing to coat well. Add pasta water gradually if sauce is too thick.
  7. Remove from heat and stir in fresh basil and grated Parmesan cheese.
  8. Serve hot, garnished with extra basil and Parmesan if desired.

Notes

Use fresh lobster for best flavor. Avoid overcooking lobster in the sauce. Add pasta water gradually to avoid thinning the sauce too much.
