  • 2 cups potato gnocchi
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh sage, chopped
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Optional: 1/4 cup toasted pine nuts
  • Optional: 1/4 cup crispy pancetta
  • Optional: Handful of baby spinach

Instructions

  1. Boil a large pot of salted water for the gnocchi.
  2. In a medium saucepan, melt butter over medium heat.
  3. Add minced garlic and sauté until fragrant (about 1 minute).
  4. Add pumpkin puree and stir to combine with the garlic and butter.
  5. Pour in the heavy cream, stirring continuously until smooth and combined.
  6. Meanwhile, cook gnocchi in boiling water until they float (about 2-3 minutes), then drain.
  7. Stir Parmesan cheese, sage, nutmeg, salt, and pepper into the sauce. Let the cheese melt.
  8. Fold in cooked gnocchi until well coated.
  9. Add optional ingredients like pine nuts, pancetta, or spinach if desired.

Notes

Use fresh pumpkin puree if possible. Toast sage leaves in butter before adding for deeper flavor. Don’t overcook gnocchi to maintain the ideal texture.
